Is it wishful thinking, or can I get more protein (the nutrient) in my diet by using higher-protein flour?

I see that both all-purpose and high-gluten flours have 4g of protein per serving (I bet this value must be rounded), although they differ in fiber content. Maybe I need to eat a lot of bread for the difference to add up!
