Hi Susan, our 00 flour has a protein percentage that is similar to our Unbleached All-Purpose flour, but different varieties of 00 flour can have different protein percentages, since the "00" refers to how finely ground the flour is. And to your question about using it in cakes, while we wouldn't recommend this type of substitution for all cake recipes, we have found this cake recipe really benefits from this flour.
