Hi Laurel! It's great that you are keeping an eye on how fast your dough is rising. You can move ahead to the next step in your recipe since your bread is rising a bit faster this time around! Times listed in recipes are great recommendations however there are a number of variables that may cause a dough to rise faster than expected (elevation, temperature of the dough and/or the kitchen, etc.) What that happens, so long as the dough as reached the recommend stage of rising, you can move on to shaping and resting before baking.
