This over turns off if you crack the door. I would also add that I have now watched several YouTube videos where people with this type oven were proofing it at 95F. The thing that I wonder about if that when you use classic yeast in the little packet they tell you to start with water between 100-110 and add the yeast and sugar and let it sit for 5 minutes. So I guess that temperature won't kill conventional bread yeast. Don't know about sourdough starter?
