Hi Mandello, the bread pictured in this article wasn't baked in a Breville oven because the point Kye was making is that this loaf got overproofed while waiting for a regular oven to preheat. However, I will pass along your request for a blog about baking bread in a Breville oven. In the meantime, you may find these recipes featured on the Breville website helpful.
