Hi Lauren! You certainly could bake this dough as larger sheets and then break the sheets up to process into fine crumbs. Rolling the dough between two pieces of parchment paper to the desired thickness (1/8th of an inch) can really help here. Bake as instructed, checking after 20 minutes. You may have to adjust that time since you are working with larger pieces.
