Hi JT. Having a baking stone or steel in your oven can help even out those hotspots! The stone absorbs heat as the oven increases in temperature. That heat is then stored and released from the stone or steel quite evenly during the entire time you are baking. No need to bake those cookies and cakes directly on the stone. You can simply place the stone on the bottom rack in your oven and then bake your delicious treats on the other racks above.
