Hi Becky! Many times, if you see an egg in a recipe for a pie dough, it is simply there to help increase the pliability and strength of the dough itself. The extra protein and fat from the egg (along with the moisture) helps the dough hold together and can make it a bit easier to roll out. Happy Baking!
