Be sure that you don't add to much melted butter (or fat in the case of other kinds of recipes), as this can cause the crust to loose it's structure while baking and shrink down the sides. Also be sure to use enough filling, or pie weights if blind baking. The filling effectively acts as a anchor keeping the crust from shrinking as well.
