Jessica November 4, 2024 at 2:04pm I use agar agar to stabilize whipped cream. It makes for a very firm cream and no change to the flavor. The only drawback is if you want to pipe it, you've gotta get it done quickly. The texture gets really rough if you wait too long. Reply
