Hi Susan, if you mean can you use whipped cream stabilized with cream cheese to fill cupcakes that are already baked, then the answer is, yes, that should work fine. It certainly won't hurt to stabilize the whipped cream that is going to top your cream pie, but stabilizing the whipped cream is generally only necessary if you want to keep it fluffy for an extended time, or when it's being served in warmer weather. If you're serving your cream pie right after you top it with mounds of whipped cream and your home is relatively cool, stabilizing the whipped cream is probably not necessary.
