I used the cream of tartar method yesterday for a 4 layer strawberry (Tall) cake :). It worked perfectly keeping the layers together with 1 lb of strawberries for the entire day. Unfortunately there were no leftovers to test how many days it could last... but it did look sturdy and tasted greate.
