Hi MartiBeth, we highly recommend our Instant ClearJel for this purpose, but gelatin can also be used to stabilize whipped cream with good results. Perhaps adding a little less gelatin would give your the results you're looking for? Recipes vary quite a bit in how much gelatin to add, so you may need to experiment a little to get the texture and staying power you're looking for. Check out this recipe, and also this one
