I have an active starter that I feed daily sometimes incorporating whole wheat other times 100% bread flour. I’m wanting to try Bub & Grandmas bread and the NYT Tartine recipes which are both similar in their starter diets - each use about 50/50 whole wheat & white . Should I start a new starter to encourage the proper environment or change my starter’s diet for a few days before making these breads?
