Hi, I have full on Celiac. Used to be a professional baker but can't be anywhere near regular flour due to my sensitivity. I tried the new flourbthat has the modified wheat starch to make stromboli.
I had zero reaction. I was both excited and cried. I could finally make my homemade stromboli again and eat it. I don't know if this helps but I just wanted to let you know. Best of luck.
