Hi Lindsey, you can certainly chill your crust in a glass or ceramic pie pan. You would just need to be cautious of extreme temperature changes (Moving it directly from the freezer to the oven). If you have had success for many years with your pie crust recipe, then it must be an outside factor that is causing the different result. We would recommend checking the freshness of your ingredients and go from there! Happy Baking!
