Thanks for addressing this topic- I have had shrinking crusts no matter what I do. I realize I usually grease and sometimes even flour the pie pan before putting the crust in the pan because I am afraid of having the crust stick to the pan. Maybe that causes the shrinkage? Have you ever tested that? Do you ever have crusts that stick to the pan? I think I have, especially if there is egg in the crust like in a tart crust.
