Hi there MJS! With this South Shore Bar Pizza dough, you may not see a lot of growth during that rest time in the fridge. You should see the dough get slightly puffy before shaping the balls and placing them in the fridge but the dough will not rise much once it cools down. The long, cold rest is there to mainly help the dough relax and develop a delicious, deep flavor.
