I have heard about the concept of replacing bakers yeast with brewers yeast, specifically ale yeast. The concept came from some recipes I saw for Italian breads. Wondering about your thoughts.
I do understand that it is not designed for yeast bread recipes, but possibly could provide interesting flavors. One would probably need to give the bread longer time to rise?
