I store my pound package of instant yeast in the freezer but I keep a yeast jar of it (the jar is probably 25 yrs old!) in the fridge so I only have to refill it every couple of months. The frozen yeast keeps fine for much longer than a year and the fridge stuff keeps at least a year.
