Such a great article to explain yeast in easy to understand terms - thank you! I have not baked a yeast bread for many years (and used cake yeast back then) but have a new oven and am dying to dive in. I’ll be using the KA “gold” instant yeast, so knowing that it can interchange with active dry yeast called for in the recipe is a big help. Happy in CA!
