Hi Estelle, we've found that our GF Measure for Measure Flour can work well when making a roux, but you may have to be a bit more careful with your process. We recommend melting the butter, whisking in the Measure for Measure Flour until smooth, and then continuing to whisk in the milk until the entire mixture is smooth.
