Hi Jo, it's not that the GF Measure for Measure Flour can't work with yeast, but it was created as a substitution flour that can replace our Unbleached All-Purpose or Whole Wheat flour 1:1 in your regular cookie, cake, muffin and other non-yeasted recipes. We don't recommend substituting into a regular yeast-raised recipes because so much of the rise and structure of this type of baked good depends on the gluten that wheat flour provides, and the Measure for Measure flour simply isn't up to that type of substitution.  

However, we do have several gluten-free bread recipes that call for our GF Measure for Measure Flour and also contain yeast. If you have this type of flour and want to make a yeast bread, following one of these recipes will give you the best results.
