HI Dorothy! For a gluten-free hot dog bun, you're best bet would be our gluten-free bread flour. The wheat starch (with the gluten removed) will allow you to make higher rising and more easily handled dough for yeast-based baking than any of our other gluten-free flours. Happy baking!
