Hi Michael, we don't have a recipe for gluten-free strudel, and I agree that it seems impossible to totally replicate strudel dough with gluten-free flour. However, we do have a new recipe for gluten-free puff pastry, which calls for our Gluten-Free Bread Flour, and that might get you to a gluten-free baked good that was at least reminiscent of strudel. I also found this recipe elsewhere online, which calls for making a gluten-free filo dough in place of strudel dough.
