Hi Testra, most any of these gluten-free flours will work well for fried chicken or thickening a sauce because they all contain plenty of starch. For homemade pasta you can go different routes, but you may have the best success following a gluten-free pasta recipe, and using the type of gluten-free flour recommended in the recipe. You could also substitute our Gluten-Free Measure for Measure flour into a regular pasta recipe that calls for our Unbleached All-Purpose flour, but you may find you need to tweak the hydration a bit by adding a little more liquid or an additional egg.
