Hi Linda, the best approach when making gluten-free breads is to follow a recipe that has been written to be gluten-free and use the type of gluten-free flour that is recommended in the recipe. This same approach will work well when you're making gluten-free bread in your bread machine. Our Gluten-Free Sandwich Bread recipe, which calls for our Gluten-Free All-Purpose flour and xanthan gum, does include instructions for baking in a bread machine in the Tips From Our Bakers section of the recipe.
