They make 5 gallon brine bags that are food safe and would work well, but I've taken to using a few of our All-Purpose Bread Bags for covering my dough once it's out of the bowl. They are 10" X 4" X 20" and if you cut off the end and then slit the bag down the long side this creates a sheet of food safe plastic that is approximately 19" X 27". You can wipe them down and reuse several times.
