Hi Jacqui, yes, the same principles apply to sourdough breads. For baguettes or rolls, I generally drape them with sprayed plastic wrap, or to make something more reusable I've adopted a technique from my old bakery days: we used to cut off the end of food safe trash bags, and then cut them down the side so that this created a large rectangular sheet of sturdy plastic that can be used multiple times. I've done the same with one or two of our All-Purpose Bread Bags and then lightly spray them with baking spray. These can be wiped down and used several times.
