Hi Christine! If there are any gaps in the coverage of the plastic bag, you will find that moisture has a way of getting in but not out of the container. For that reason, I'd recommend using a tighter seal like a bowl cover or plastic wrap. While a little moisture is certainly okay, too much is not ideal. Happy baking!
