That’s because Grandma greased the bowl, put the dough in and then flipped it over, effectively coating the dough with a thin layer of shortening which kept it from drying out. And to rise she put it in ‘the warm spot’ wherever that was in her house.
If this ‘experiment’ had been done with more accurate parameters the differences would not have been nearly as dramatic, perhaps even negligible.
