I tend to use a towel for the second rise, especially for those loaves that are supposed to rise an inch higher than the pan. A sheet pan or pot lid isn’t going to work for those. I used to use a piece of plastic wrap with a spritz of vegetable oil to prevent sticking, but stopped in order to cut down on single use plastics. I suspect a bowl cover might still need an oil spritz, the then means I need to be sure to wash it every time. I may just keep using the towel for the second rise on those particular loaves.
