This is absolutely the best bread tip for a homesteader. I've always set my dough out on the porch rail with a tea towel and the wind and sun rays wallow it into rising. It always gets the leathery upper and I just knead it to death whenever I shape it. The loaf isn't smooth! When I let it rise inside, I rarely come across this problem.
