The temperature aspect is interesting! I use a damp towel (fully wet and then wrung out) which keeps everything moist and doesn't stick. I do sometimes get a little skin after an overnight in the fridge, in which case I fold the outside in so it rehydrates. Then I use the same damp towel to line a banneton.
