Hi Bree! Ermine Frosting is a very light, whipped frosting. It is not the best for intricate designs, but a simple swirl on the top of cupcakes should be just fine. So long as the cupcakes are at room temperature (and not out in direct sunlight or very hot weather), they should be fine for a couple of hours.
