I would just like to say that Ermine Icing is THE de facto icing for red velvet cake. Cream Cheese is for wimps, posers and losers!! Ermine Icing forever and I won’t have it any other way!! And I have it every year!! I look forward to trying your recipe. It sounds like what my mom used to make (she no longer has her recipe.) So, I have been on a decades-long search for just the right recipe. The one I have made, which came from a friend’s mom, is too heavy - not light and with a lot of butter. It won’t hold together unless I refrigerate the cake after one day. It won’t be until early August that I make it, but I will report back after I give it a try!!
