Hi Kate! Instant Clear Jel is a modified food starch made from corn that thickens instantly when it is mixed with liquids. In this case, it is used to help stabilize the cream filling. If you don't have any on hand, we would recommend simply omitting it and whipping your cream to stiff peaks. That slightly longer whipping time can help increase the staying power of the filling.
