Hi Rosanna, I can't testify to the shelf life of another company's products, but the best if used by date for our Instant ClearJel is two years from the production date. When stored cool and dry, older product is unlikely to cause health concerns, but it may not perform as well as fresh product. Unfortunately, we don't know of any official method of testing this product, but you could certainly try thickening a small portion of fruit and see how it does.
