Because ClearJel creates hold even without cooking it is perfect for mousse, Donna! You will want to make sure you add it to granulated sugar before mixing into any wet ingredients and we'd recommend starting with about 1 tsp per cup of cream and then increasing it if needed. We  have a great Chocolate Raspberry Mousse Cake Recipe that you could use- just omit the cake!
