Would Instant ClearJel be suitable in a mousse recipe? If so, how much would be needed and when/where would it be added? My little granddaughter is vegetarian so cannot eat gelatin. She loves chocolate and strawberry mousses but hasn't been able to eat them for several years. Your thoughts are much appreciated.
