I’m wondering if a cold oven start will reduce the flakiness of pie crusts? I always use chilled pie crust dough and try to pop into hot oven quickly so the butter/shortening doesn’t melt. Seems this results in a flakier crust with more pockets. Did you notice any difference in flakiness?
