Hi Geri, yes, as a general rule I would be cautious about over-filling a sheet pan and 2/3rds full is a good guideline. However, since Rossi has done these calculations for half-sheet pans, you should be fine following her recommendations. I added the word of caution for the smaller pans just because we haven't tested that size pan with this process. In other words, the math works, but cakes may bake a bit differently in the smaller pan sizes.
