Hi Nina, an 1/8 sheet pan is going to hold 1/4 of the batter that a half sheet pan will hold. If you're were looking at a recipe that made three 8" or 9" layers, you could simply make a 1/4 recipe and that would work. If you're looking at a recipe that makes two 8" or 9" layers, you would want to make a half recipe. Be sure to fill your 1/8 sheet pan no more than 2/3rds full.
