I fixed the problem with my bread not rising very much during the second rising. Try this, kneed your dough to the count of 100 pushes, (about 3 min). Set a bowl over your dough and let it rest for 10 minutes. Then, repeat the process again with 100 pushes then rest again. I repeat this process 7 or 8 times. It's physically not tiring and you get your kitchen cleaned, the beds made and cloths in the washer. After the kneading, put your dough in your bread pans and let them rise in warm place. These loafs will be very nice and high and ready to be baked. You'll have the highest loaves in the neighborhood.
