Greetings! I found your article and tips very helpful. One thing that was not mentioned when you spoke about the pros and cons of using ovens for proofing was ovens that come with built in proofing settings. I recently purchased and installed a new electric double wall oven, and both ovens come with proof settings. My kitchen is on the cold side so I used to run a rinse cycle on my dishwasher, then drain it, and put my dough inside the warm and humid dishwasher as a proofing location, and it worked! But with my new ovens I no longer need to do that.
