One thing that was not mentioned when you spoke about the pros and cons of using ovens for proofing was ovens that come with built in proofing settings. I recently purchased and installed a new electric double wall oven, and both ovens come with proof settings. My kitchen is on the cold side so I used to run a rinse cycle on my dishwasher, then drain it, and put my dough inside the warm and humid dishwasher as a proofing location, and it worked! But with my new ovens I no longer need to do that.
