Living in the northwestern part of CT, making dough rise in cold months can be challenging. Another suggestion: I've recently discovered that my Instapot works wonders if you place your dough into a slightly greased pot, set the yogurt function, put the lid on vent, and place the lid on. I usually check after an hour and find amazing results!
