Hi Rosemarie, once you've patted out your scone dough into a 1/2" thick rectangle, the easiest way to divide it into 8 pieces is to cut it in half twice (lengthwise and by width). You will then have 4 rectangles, which can be easily halved to yield 8 relatively equal pieces. A Bench Knife is a great tool for this type of dividing.
