My strategy for storing whole grains is to mill them myself as soon before I use them as practical. Reasonably inexpensive mill attachments that fit the standard port on a KitchenAid or compatible mixer can be had. Buying berries in bulk is both cheaper than buying milled flours in smaller quantities and allows me to use a few more obscure grains than might otherwise be possible. With a few inexpensive sieves I can tailor the extraction to the needs of each recipe. The mill makes a racket, though.
