In this instance, we’re using the term masa to refer to dough made from nixtamalized corn, but since masa literally means dough we don’t doubt the word can also be used to refer to other doughs, including wheat tortillas. Our use of the word “masa” is similar to the way Pati Jinich uses the term in her book, Treasures of the Mexican Table: “Masa is one of of the cornerstones of the Mexican kitchen. The word means dough, and in Mexico, unless otherwise specified, it refers to the corn-based dough used for tortillas.” We appreciate your perspective and hope this provides some clarity!
