Hi Elisa! Yes, you can let the loaves rise conventionally at room temperature instead of doing the overnight rise in the fridge. You're timing will be dependent on how vigorous your dough is and how warm your kitchen is, so just keep a close eye on the dough as it goes through that last rise before baking.
